2013 Cabernet Sauvignon from Barossa

We believe that Cabernet Sauvignon from the Eden Valley region is one of Australia’s little hidden secrets. Not much is produced, but what is will take your breath away with its complex flavours. Our Kyara “Justice of the Peace” is an elegant combination of mulberry and briary fruit flavours, supported by a firm, textured tannin finish typical of cool climate cabernet.
Our winemaker Jo Irvine has skilfully crafted our Cabernet Sauvignon to be a true expression of Eden Valley. Great detail is taken through every stage of wine making to ensure our wine expresses our single site estate vineyard and the season it came from.
Our “Justice of the Peace” Cabernet Sauvignon is named after our pioneering ancestor Heinrich Fiebiger, who took on this role in 1890 after being recognised for his dedication and wisdom during the years the region was settled.

The Vineyard

Our “Justice of the Peace” Cabernet Sauvignon is made from our estate grown single site vineyard in Keyneton, part of the Eden Valley wine region. Planted 25 years ago, the cabernet sauvignon vineyard is small and low yielding, but the quality of the fruit is outstanding. Our cool climate means each season we pray the fruit will ripen, and when it finally does we treat the precious harvest received with the care and respect it deserves.

Background

Our family has lived and thrived of the land in Keyneton within the Eden Valley region for over 150 years. We have dedicated our wines to our ancestor Heinrich Fiebiger, who had many significant roles during the areas settlement. In 1890 he was given the honour of becoming a “Justice of the Peace”, given to a respected member of the community to help administer law.

The Vintage

The 2013 vintage was harvested on 26th March, after a dry growing season with late finishing rain fall. A warm February, followed by March alternating between cool and hot weather ensured a slow ripening season. Our low yielding vineyard ensures intense fruit flavours. With this vintage being our first for Kyara, we were overwhelmed by the flavour our vines gave us.

Our Winemaking

Our winemaker Jo Irvine is passionate about Cabernet Sauvignon from Eden Valley, and savours the limited amount of fruit we give her. Great care is taken to allow our fruit and vineyard to shine through in our wine. After harvest the grapes are destemmed to an open top fermenter followed by bag pressing. The wine is matured for 18months in a combination of French and American oak hogsheads, with 30% being new. The wine is bottled to ensure the style retains primary fruit freshness with new oak complexity and an integrated tannin finish.

Wine Profile

An elegant combination of mulberry and briary fruit flavours of many layers with enticing aromas of cassis dark berries and some leafiness. Supported by a firm, textured tannin finish which lingers and persists. The wine displays a bright dark crimson colour with red hues.

Food Pairing

Our favourite with Cabernet Sauvignon always has to be roast lamb reared from the family farm. Or for a special occasion when dining out we love nothing more that pairing it with Peking duck from one of the brilliant Chinese restaurants Australia offers.
